Cowboy first opened in January of 2003. Papa Jim had a dream, some actual experience in the field, and set out to make it happen. After years of growing the place into a local favorite, Steve managed to convince Kathy that owning a restaurant would be fun and worthwhile, and in 2015 they took it over.
The first goal was to return it to its roots, and it stuck. The BBQ sauce recipe goes back multiple generations in the Botkin family. The pancake and waffle recipes are Steve's own, which Kathy was “forced” to taste-test. Everyone you see, and some you don't, have a hand in your meal, and when you leave a tip, it's shared with all those hands.
